i started an overnight cook for a couple butts. At 225, this should be a 12+ cook. But I can’t get me PG500 to hold at 225. What am I doing wrong. I even dropped the set temp to 175 just to see what would happen. It was between 260-270. My LHT and HHT we’re both set to 25. Not sure what I’m doing wrong here. Any suggestions?

I have had mine build up fine dust in the bottom of the auger that caused these conditions.
If you are having problems maintaining temp you will need to adjust your LHT/HHT settings. Weather conditions as well as the load and type of pellets can affect the temps so you may need to adjust the LHT/HHT slightly from load to load. Search for this topic and it will go over this. Thanks Electrotech. I've read that most informative post, played with the settings etc. I'm not referring to the expected "temp swings" but the overall cook temp being too high to cook low and slow even if the set temp is say 200 to 240.
