I was working today in Lower Manhattan (draft beer industry.. install and maintain draft systems).
When I went to a new customer I noticed the CS in the kitchen. They are not a BBQ restaurant but they have a few smoked items on the menu (pulled pork taco, baby back ribs).
First thing I noticed was how spotless the smoker was. I asked one of the guys in the kitchen, how do you keep it so clean.
He said, we clean it with easy off oven cleaner after every use…. I asked why would you do that, he said that’s always how we have done it.
