Picked up another 7.52 pound pork picnic shank at the market that was on sale for .99 cents a pound. Put it in the 009 for 18 hours at 195F.
Picked off the fat, a little Sweet Baby Rays and a spot or two of Chesapeake Fire hot sauce on a Kaiser roll....perfect!
It's been cold here in CT with lows in the low double digits but the BBQ tastes great!
