Great job and great pics. I have hot smoked a bunch of salmon, usually not cutting as you did. Looks like a great eay to do it.

Those look mighty tasty. The local Fresh Market has Copper River salmon in at the moment. Might be an idea there.

Thanks Cal, boy can I ever use some help. I have been a week trying to post a picture. Almost cost me a wife. Didn't want to bother Smoke cause he needs time to enjoy his new deck. You can PM me if you want.

I think Smokin' might be busy with tornado damage to his community as he said a twister passed within a mile of his house. Just a guess on my part.
