Actually you don't have to have it hosted, and prefer to have them hosted here.

1) send them to me and I'll put them on the CS server or

2) There is a feature in the forum called "photo album" where you can load a series of photos. In the same place you clicked to start a new topic, there is a link just below that one "photo album".

Note, they will have to be resized as there is a limit on bandwidth.

The reason is that ALL other servers will eventually change so this photo will disappear. Given the forum has been here 6 years, it's happened many times.

Thank you! We keep adding bit to the trailer and it is getting very noticable. We carry green tables to which I have added plastic pots with a hole drilled in the middle for the green umbrellas. I put inexpensive silk flowers in the pots and it looks really nice. People seem to like the ambiance.

We do not have air conditioning, but it is cooler way up north here. It is 50 degrees out right now at 1 a.m.. Some days are rather warm, okay, hot, but we are carrying a fan, but since we added that the days have not warranted it. The people I have talked to with air conditioning tell me it doesn't work well for them.. Goes out fast amd isn't worth the trouble. But, we are not so hot up here. Maybe if it were hotter I would want to give it a go!

Hi Freebird.

Thank you! We did build it. It was a stock trailer in a previous life. We bought it to haul our reindeer to events, but that never panned out in a big way, so Patrick transformed it into the smokehouse. I wanted a steeper roof pitch on the trailer, but Patrick had some specific reasons why he wanted it the way it is. I am all about how it looks and he is all about what is most functional.

I am going to add a desert flower painted trim to the bottom of the trailer: more color and finishes off the bottom edge. Noting to girly, just bright and colorful. Smiler Since we added the bright green cactus, the coyotes and moons to each side we have noticed that it is catching more eyes. Anything to gain more attention!

This week we added two sandwich board signs for the side walk or street area. We had them done on the corrugated plastic sign board which is fairly inexpensive. Patrick attached them to a painted white plywood backing board and added the parts to make it stand (feet?) It looks nice, is heavy enought to take a good wind without toppling and it attracts attention. I think we have about 75 dollars into the project. I am sure it paid for itself the first day out. Simple sign, white with hunter green lettering ... Smokehouse BBQ ... Pulled pork, Brisket, Ribs. It does the job.

I was wondering if it wouldn't be too muc trouble, or "copyright info" if those who have catering or mobile rigs to post some pics of their layouts. The reason I am asking is our catering business is growing and we are looking to get one to use as our commercial kitchen. And of course, the more info, the better and there is a lot of great info here. I am not looking to take away business or anything like that, it's just that I would like to see different set ups and what works and doesn't and what you would change. Thanks alot,

I would think you might have a lot of variation in layouts according to size and type of trailer. Like ours, where the wheel wells sat played a big part in where we could place things. The fresh water tank and holding tank had to be worked into the plan with care. Our plumbing runs on one side with the tanks. The wheel wells made it necessary to order specially made tanks to fit the configuration and capacity we needed. You also have to consider weight distribution. We also have five sinks in our rig. We do not have a commissary, we are totally self contained. A lot of our space is taken up with the sinks!

I will gladly post a picute of our layout. Probably get it up tomorrow.

Thanks Kate. The water tanks brings up a good question...where are most of them placed? Under the trailer like a regular camper trailer? Are most concession trailers plumbed and wired like them too? What about serving window placement? Who likes what where and why? As ya'll can see, I have lots of questions and there are no wrong answers, just personal opionions and work experience. Hi Kevin.

I will tell you what I know with the disclaimer that I am not the expert in the family. Patrick is in construction and remodeling, so he has the answers about our trailer. I do know that our tanks run under the cabinets on the trailer floor. You cannot see them but they have doors for access. They are run off a DC pump and a battery. Our water heater is on the wall, a small unit that runs on LP gas. Does a great job heating water too, takes up little space and is ideal for our purposes. It fires when needed. Click Click Click ... hot water of legal temperature. I still have to get a picture taken for you, but it could take me a while ... I am preparing for our Friday and Saturday run. Anyway, over the tanks we have a plain counter for cash register, odds and ends like napkins and such. I keep my CD Player there too! Smiler

Our pipes are PVC for the plumbing. Our electric is surface run in conduit. We left it silver to match the stainless. Smiler Running surface allows Patrick to add outlets easily if and when he deems it necessary. We have a breaker panel too. Beyond that I know we have a big plug in thing for the outside to attach to the electric supplying us. What size it is I am not sure. It is a big black heavy gauge cord I do know that. We also have a generator and an inverter. That is all I know about them!

We have the coated light bulbs for the service areas too. We are required to have those or covered bulbs. These cost a bit more but are easy to use.

Our service window is at the back of the trailer. The window takes up almost the entire back side of the trailer. It is a slide type window. Patrick built the screen window that slides to keep bugs out. It works there for us because of our layout. The sides of the trailer have equipment running the lenght of each side. Well, most of it anyway. We do have a bit of room to add this or that if we need to.

We also have some storage area in the goose neck space. Not a lot, but usable.

The one thing I know people love about our unit is that they can see right into where we work and can judge how clean we are. It is a fantastic selling point. People notice. I have had numerous comments on how clean our place is and how important that is to them. We have nothing to hide. It is a point of pride with us. They love to watch and I do believe CoffeeBluff mentioned this in a past post. I think it was him.

Well, I have to run. I have prep work to do. But, I hope I have given you some clues to what we do.

Hi Peggy.

Well, you know about us, but for anyone else wondering, we are also totally self contained. We do not have to have a commisary, but we do have to have a base station. We are fortunate that we have a holding tank on our property for dumping and we only have to have the well tested by the state for that part. The inspector checks our holding tank and well for whatever they are looking for and views our paperwork on the well. We didn't know we could have our base station on our own property until we were chatting with the sanitarian. Like you say Peggy (Jack too) it is good to be friends with your State inspectors. They are there to help you, not just put a stick in your spokes! They are a wealth of information.

I am told that Wisconsin follows the Federal Guidelines for food management and requirements for the trailer. I am also told that we would be able to run in any state because of this. I also think the wording of commisary and base are close. But, I think commisary implies that you might need to use the washing facillities at the commisary and the storage, etc. I don't think this is true for you and Jack, Peggy. You have all the sinks and so forth. You just need the water and dumping spot. I have a sticker in my unit that states my base station address. It must be displayed. I could use a gas station with RV water and dumping, or even the city water and dump site for campers. Of course they inspect that site and charge me for the inspection wherever it is! I wonder if you might be able to do the same?

You'ins and us'ins are full fledged restaurants in the eyes of the states. We have gone the extra mile to put in all those blasted sinks! I am obsessed with those sinks! Smiler Seriously, it seems those sinks are the end all in the inspectors eyes! Smiler
