Ok guys go easy on the new guy........Picked up some "cheap" pork. I was going through the meat section and another customer said he loved it. So IO thought I would try it. It is pork backbone. It is a 6# package of Pork backbone. This will be my first attempt at BBQ'ing. I have a New Braunfels Black Diamond Smoker. I plan on putting a rub on it an letting it sit overnight in the fridge. When I go to cook it tomorrow for a 6# piece ot meat, actually I believe it is two 3# pound slabs, what temp do i need to do it at and for approx. how long?

Update: Got to looking at the package closer and realized it is already cut like you would do to seperate ribs.......
