hi guys...i am smoking a pork but this weekend, can i use hickory wood, and if so how much, any tips i could get would help, this is my first butt. what temp do i start at and how long should i expect to smoke it for. i plan to use a rub and some molasses at the start. when should i baste it, if at all. i went to butt 101 but i think i need the small details. thanx in advance sfent

Hickory will be great ,although a little apple goes nice with pork.

A couple of 2 oz. chunks should get you through.

Starting with 225� is never a bad plan and that way you can chart how it went,if you want to vary it next time.

Thinking approx. 2 hrs./lb. should give you a fair approximation.

It will plateau somewhere between 150�-160� and seem like it will never move.

Don't worry about it.If you get real antsy,you could bump it up to 250� and it will move ahead a little quicker.

I'm not much for basting butts or opening the door unless I can find a reason.

The butt should slice fine beween 185�-190� internal and should pull easily between200�-205�

If you find the internal hanging forever around 186�-188� you might open the door and try to wiggle the bone and check the temp. in a couple places.

If it is sorta loose,you can wrap it in double foil and a towel and let it rest in a small cooler for a couple hours-till you're ready.

It will continue to rise another 6�-8� and be fine.
