"How much shrinkage should you allow when smoking Pork Butts?"

Someone was asking for a rough percentage.

I've got my info, but wanted anyone/everyones input (Stogie? Jim Minion?)
Everyone? Anyone?



What's your experience on shrinkage?

I find in a cs smoker that you will run between 35 and 40. There is a little difference depending on the temperatures you are cooking at. And some differnce depending on the product itself.

I have found that if you use smaller butts and smoke at 225 you get less shrinkage (about 5%) than if you cook larger ones at 250...
