There was a discussion on Ray Basso's forum about whether butts always lose 50%.

We have also had discussions about the effect of altitude on the CS.

Here are a couple comments from Debest 1 out in NM.

He also cooks on offsets.

Last Thursday I cooked 118#s (2 cases) of Butts from Sam's..... I cooked them up to 200deg. in my Cookshack 206s!!! I put them on the scales after removing the bone and what little fat that was left, and the net usable pulled pork was 81#s. The meat was jucy, tender and had a good smoke ring and fair bark. I cooked 60#s Baby backs Wednesday, the Butts Thursday, 84# Prime Pork Ribs Friday. Had everthing sold before it went in to the pit!!!!!!!!!!!!!


I am at 5285' elevation so I cook my butts at 215deg to bring them up to the 170deg plateau then kicked it up to 250deg to bring the Butts up to 200deg internal temp.

Debest's numbers are about 68% yield on the butt he did, I find that better than I can regularly achieve. I figure 50% and if it is better that's great. Now brisket is another story, if I can get 50% I'm happy. Some are as low as 40%, one of the reasons I have switched to clods and rolls.
