Do you folks leave the door slightly ajar after you've finished cooking like the manual says to do, or do you latch it up closed? What I mean is do you keep the door cracked open? I find this stange, because I'd think you'd have all kinds of critters wanting to aample some of the smells on the interior walls.
You need to do a fatty pork butt after the smoke seasoning for the first cook.

I think you should leave the door open until the inside cools off to decrease condensation inside. You will wipe off excess fat from inside with paper towels while it is still warm, and the grills, woodbox, and racks will be in the dishwasher, unless going right into another cook soon.

I don't know how hot those fire boxes get, but it can handle up to 1400* temps. You can find it all over the internet or at auto paint supply stores. Just search for POR-15 and POR-20 (header paint).
