The ET72 has only one probe which is to be used for meat. The 73 has two probes; one for the meat and one for the smoker. The probe on the smoker has the ability to set both an upper and lower alarm limit. If the temp of the smoker goes outside the higher or lower limit, an alarm will go off if you have it turned on.

I personally use the 73 because I like the smoker probe. While my FEC is fantastic, nothing is 100% infallible. So I use the smoker probe to warn me if something may be going wrong with the smoker.

Keep in mind there is also an ET7 which is a remote therm by Maverick which has two meat probes. Just in case you want to monitor different meats.
