Hi Everyone,

I've been reading this forum a lot over the past few weeks, so I figured it was about time to introduce myself. I took delivery of an AmeriQue from the Charcoal Store, seasoned it last night, and currently have two pork butts smoking away.

Thanks for all the excellent posts, tips, and ideas for great Cookshack BBQ. I'm very much looking forward to many years of smokin'!

Well, the pork butts turned out great. They went for 12 hours and 45 minutes at 225 to an internal temperature of 195. They had a nice bark (see pic). I whipped up some of Smokin's finishing sauce and made a batch of Memphis style slaw. The family loved it (except for my 16-year-old vegan daughter, who stayed clear of the meat). The best part is, I have a ton of leftovers -- looks like a foodsaver is in my future.

Here's the final pulled pork. The bark mixed in nicely. I sprinkled a little more rub on just for good measure and mixed in. It was yummy on white hamburger buns with the sauce and a dab of slaw on top!

Nice job on the pulled pork. Smokin' has a recipe for a finishing sauce the goes real well with PBs,if you ever need a change of pace.

Congrats on your 1st Amerique PB venture. Maybe you can turn the vegan away from the Dark Side Smiler
