Hi Guys N Gals! Lots of great info in here--I'm trying to decide between the Smokette Elite (025) and the AmeriQue. I understand the electronic differences, but my question is regarding holding temp in the Smokette. Once my meats have reached internal temp, can I manually hold the temp at 140 in the Smokette? Would it be better to FTC for a few hours or keep at 140? Smoking for a family of four, I'm having a tough time with the price difference between these units. Anything else I'm missing here? Thanks!

Congrats on the purchase...

You couldn't wait could you (know the feeling)?

You find "holding" will depend. You may through your own methods, use foil and if you do, you don't have to hold it in the smoker.

But realize, there IS a learning curve before you can get your timing down. So just start experimenting when you get it and it all comes rather quickly.
