Thought it was a funny question.

Candy will see it and jump in and help, I "imagine" the blend is the same, as it would be too costly to blend pellets differently, but I've been wrong before.

To me, it would make sense to buy the big bags like you're thinking, instead of the smaller ones.

the pellets for the fec in the 20 pound bags are 2/3rds oak and 1/3rd flavor wood. candy also makes a pure flavor pellet that goes into the small bags that you are asking about. those are 100% whatever the flavor is.
either one will work fine in the foil bag.
she also makes a smoke stix which is 100% flavor wood. looks like a pellet on steroids and the nice part for me is i don't have to make up a bag when using them in our sm150s.
only real reason i know the differences is because we give out samples of the product every saturday here at the farmers market.

BOB, I have not tried the pouch before, but I know some that have and liked it. Just put a hand full of pellets in the pouch and put a couple of holes in the top and you should be fine. I put the chuck of log on the roof over the fire pot. I am not supposed to talk about the fire Russ!!! Thanks alot...LOL I have played with it a litte. By the way has Candy Sue ever sent you those bags of pellets we bought at the Jack? I am still waiting on them.

my customers sure can but to my way of thinking it is more visual. found this out the hard way with my new sm150. used hickory wood chunks. the color was more to the brown side than when i use the 2/3rd oak, 1/3rd pecan mix. that mix gives a much brighter mahogany color or more to the reddish hue side which is especially more noticable on chicken. also the taste is more to the more subtle side but that makes sense since oak is a milder wood taste in comparison to hickory.

my experience has been just like yours on the darkened pellet thing. one thing i did learn the hard way though on the pellet bag is only put one hole in it. i use a toothpick for that and my smoke time(visible) is around one hour. by switching to the smoke stick i found that my reload time went up from 4 hours to around 7.5 hours. the load i use is 2 ounces of oak to 1 ounce of pecan and are weighed which is the same as 3 ounces of pellets.

Thanks for the answer, I figured all was well, but since I am new to all this, wanted to check it out. And I am careful, only 1 hole pricked. And thanks to all who post here, I have taken the approach that if I read first, maybe I can learn to cook, LOL. Been doing lots of butt and brisket so far. Even did a PR for Xmas and even that was a big hit. Love my 008, for a "non-cook" it's great.

Sorry, folks, I've been in Chicago-land since Wednesday. Just saw all of this banter...

A pellet is a pellet is a pellet. Least that's what it looks like anyhow. BBQr's Delight (brand name) pellets are 100% flavor wood that's named on the bag. Orange pellets look different from mesquite pellets which look different from hickory... You can use any pellet for smoke in a foil pack. In fact, I prefer blended mesquite when I'm using mesquite for smoke. 100% mesquite is very strong IMO. It's just a matter of quantity. Use more of the blended pellets to get same "character" of smoke flavor. Tend to get a darker smoke color from the oak though.

Foil packet turns pellets into charcoal. I've got a Cobb Cooker which uses 8-10 briquettes and the cast iron smoke pot. It turns pellets totally to ash. Only non-pellet cooker I've got that does that.

You'll remember he and I bought pellets which we GOT! but you asked us several times throughout the Jack when we were going to come by and get out pellets.

You've just been TOOOOOOOOOO busy to remember the small stuff.
