Just bought a new smoker & the instruction say to run the smoker for 4 hours with no meat to prime. But in the next quoted paragraph it says to smoke cheap, fatty meat.
Folks on the forum recommends seasoning the smoker empty first and on your first smoke try a fatty piece of meat like a pork butt which is very forgiving to give it additional seasoning.
You are letting it run to be sure it works-don't worry about temps all over the place. You are blackening the silver walls. Think of an old iron skillet.
