My son is returning from San Diego and points south with a couple hundred pounds of yellowfin tuna and an albacore. I guess they really hit them.. but the great white sharks also hit a huge number of the fish they caught.. cleanly severing the bodies from the head. Guess it was an awesome sight.

Anyhow, I'm headed to his house in the morning to fillet them with him.

What recommendations do any of you have for Tuna? It is, as I remember, pretty dry. He made some pretty good smoked tuna a few weeks ago in his big horizontal grill by putting a smoker box on the coals at the other end of the grill. Not sure what he marinated them in.. but there was some orange in it.. and I believe teriyaki but not sure.

Any help appreciated.
