I know we have someone in the forum who makes pepperoni. I just cant remember who it is now, but hang tight. Maybe they'll show up.

In the mean time here is a recipe off of Eldon Cutlips recipe site. I have tried several of Eldon's recipes (just not the pepperoni one) and have liked them.

2 tsp. prague powder #1
4 tbsp paprika
6 tbsp ground mustard
1 tsp. ground black pepper
1 tsp. white pepper
1 tsp ground celery
1 tbsp. mace
1 tsp. grandulated garlic
3 1/2 oz. salt
1 1/2 oz. powdered dextrose
6 oz. fermento
this is for 10 lbs. use 80% lean beef chuck. paul
