I have spent the last several weeks smoking spareribs in my smokette for family and friends. I am able to smoke 3 slabs each time (cutting the slabs in half and placing 2 halves on each cooking grate.
Once I trim the ribs of the chine bone and the brisket flap, they look so good I hate to mess up that wonderfull looking long rectangled beauty by cutting it in half. I figured the only way I could smoke them without cutting them in half was to use a wooden dowel on the top shelf and hang the ribs with the rib hooks that Cookshack sells.
Can you do this in a smokette? Has anyone ever done it this way in a smokette? If you cook them to the degree of doneness that I am used to I'm afraid they will fall off of the hooks.

Cookshack's rib hooks
are praised throughout the industry,although I am not a rib hangin' kinda guy.

Measure the lengths of the slabs you usually cook,figure where you would be if you went two ribs down on the thick end.

They may hold up on the thick end,however done.

I usually just cut ,prop, and stack 'till I get about five slabs in.

Is it beautiful,a work of art,does my bride shake her head,does it taste good.

I've used the hooks quite a bit, and have never had the problem of falling ribs. However, in a Smokette you would still have to halve your slabs since there ain't much danglin' room in your cooker. Of course, you could try the 'hammock' technique and hook the slab at each end, but then the drippings would just pool in the middle...

I was turned on to this idea from the BBQ Porch, but:

Y'know those semi-cheap roasting pans from places like Bed, Bath & Beyond that have that nifty little V-shaped roasting rack?

Well, if you get one the right size to fit inside your cooker, you have yourself a relatively cheap rib rack.

The one I have, though, is about 16" long so it won't fit in my 50, but should work in my new WSM! Smiler
Ye know, I haven't used my smokette in a while, but memory tells me I never had to cut the ribs in half to fit them in there. About all I did was cut one of the ribs off the end. Look at your rack, there's always one needing to be trimmed off.

It might have touched the sides for a while, but then it shrinks up.

Like the idea of a cheap rack holder, don't think 16" will fit in a WSM, but they do invent HackSaws for modifying those things.

I'd work on a rack to hold them instead of rib hooks, I think Joe is right, you'll still have issues with hanging.
