Using the AmeriQue, I have smoked ribs both with the new rib racks and the old style rib hooks. The following is a review of both methods in the AmeriQue.

1. Rib Hooks - A package of 12 hooks arrived with my AmeriQue (no longer furnished). I had used the hooks with my CS55 and always liked them better than using the flat racks, but had to cut off a couple of bones to stop them from hitting the fire box and floor. When used with the AmeriQue I did not have to cut off the bottom of the spare ribs. I smoked 8 full spare ribs to perfection. I did need fire resistant rubber gloves to remove the ribs to a tray and then painted them with a slather while doing so - messy, but a sample was a taste to behold. Big Grin The ribs were perfect and took 5 ½ hours at 225 degrees and did not require shifting the bottom and top racks as was done on a previous smoke using the flat racks.

2. New rib racks for the AmeriQue - The racks were designed with the middle of the slots missing. With the slots too wide and not very tall the Saint Louis style ribs fell over. The ends of the ribs were too long and required either cutting or folding under. Folding under didn't work. If I cut the rib racks in half, they wouldn't fit at all for they just fell through the middle of the slots and laid on top of each other. When left whole the ribs still fell on top of each other. The 1/3 missing metal rack, of each slot, does not hold the ribs on edge and they just collapse on top of each other. Now the ribs did smoke and cook but not evenly. I tried the rib racks twice, once with the ribs cut in half and the second time whole and folded in on the ends. $2.00 worth of missing steel wire per rib rack and a narrower slot put my three AmeriQue rib racks in the "not for use" pile. I'm not complaining, I always liked the rib hooks anyway. If just smoking a rack or two the flat racks are fine, for lots of ribs the hooks are best for me. I am sorry I recommended the rib racks to a friend for his AmeriQue before I even used the racks the first time and he complains to me every time I see him.

I agree totally, even BB/Loin ribs fold in the center and do not brown well where they touch...fall together like dominos during cook, no matter how you stack the deck. I usually sauce'em and few can tell the difference, just no bark.

I guess "That's life, that's what all the people say" (Thanks Frankie).

However, if you want to do a load of Ribs, the racks are nice... do the math 6 or 7 (7 if you really want a full load) per rack X 4 racks.


I best try the hooks too (for smaller loads),

smokinsteve wish i had some pics, maybe soon. i have the 008. i hang my full slab ribs, spares and bb's horizontal. i made some hooks from 1/4 ss round bar and 1/8 x 1/2 ss flat stock, close "s" shape for both, i like the flat bar better. with a little creativity i can get 4 full spares on 1 grate, set as high as you can. i have the 5 slot side racks and hang those rib as high as i can get. just curve the slabs and they will fit(2 person job, 1 holding grate, 1 hanging hooks) hope this helps. paul
