I came home friday evening and mixed up a batch of smoked meatloaf. (If you want the recipe, KDMontgomery has a post with the recipe in it.)

I followed the recipe per instructions except I added my own rib rub. I put the loaves in those foil loaf pans on the second rack from the top. I also put 3 racks of baby backs on the rack underneath the meatloaf.

Popped the smoker on to 275. I figured since I can do ribs in 3 hours at 275 and the meat loaf needed 3 hours at 275 it would be a great match. I might add that this was my first go around with ribs on the FE100.

At 2:30 of cooking time I came out and glazed the meat loaf. I also spritzed the ribs with an apple juice mist.

30 minutes later I came out to take all product out of the smoker. I grabbed the ribs with some tongs to slide them onto the platter. They were so tender they broke in half. But the neat part is that the meat wasn't mushy.

The meat loaf? Oh man, I dont think I will ever eat meat loaf any other way. My neighbors are so happy with my new smoker Smiler
