I have the model 55 as well....I did my first ribs by hanging the full rack using the hooks. The results were OK....I found the ribs cooked faster at one end because the ribs was closer to the heat source (this is what I like to think).

On my next set of ribs, I cut them in half (right at the 6 or 7 bone) and smoked them for 4 1/2 hour just to see if it made a difference and Yes, it did and I found it easier to move the ribs around because they were shorter in length.

I have only smoked 3 full racks....You should be able to do the 7 racks if you cut them in half like I did. Also, when you wrap your ribs for the final hour, can't you just use your kitchen oven? Once I take my ribs out, I will put the bbq sauce on, foil them and wrap some towels around them (I like to keep it simple).
I think you get a more even cook by laying the ribs flat on the racks.

HairBear. I personally don't wrap my ribs, however, I know many people that do and finish them in the oven. By that point all you need is the heat because the meat has already accepted all the smoke flavor it is going to.
