There is quite a bit in the forum on doing ribs in a CS a number of different ways but I haven't seen any mention of someone using the 5 slot slide racks that can be ordered as an add on for the SMO25. I've been laying mine on the two shelves for up to 4 slabs and did get a rib rack to add a few more. I was thinking it would be ideal, but costly, to order the side racks and 3 more shelves for doing up to 10 slabs at a time 2 per shelf.

Has anyone tried this?

Do you have any specific questions?

It's not really a "method" just a tool to do ribs. I don't think it will change the taste of them at all, just allow you to do more. You'll get people that use racks, some lay them down (some bone up, some bone down) and some like to hang them. I personally don't see a difference, but individual results may vary and I always advise go with your preference.

I'm thinking most people aren't trying to cook a bunch of ribs like that in the SM025.
I was just wondering if there was enough space between the racks to slide in a couple slabs using all 5 racks. I've had great luck with Sam's loin backs that come 3 to a pack. I like the lower weight slabs that average around 2 lbs per slab. I smoke at 225 for 3 hours 45 minutes and have done them both bone up and down. Don't notice a lot of difference one way or the other. I've been very happy with the results and the meat is at the point where it can be pulled cleanly from the bone while eating. It's just when you have a group over and you want to do 9 slabs (3 Sam's packs) at a time I was thinking the 5 racks would make a great way to do that many.
I just talked with Mary at CS (CS is so nice to deal with) and she said they could custom make a 3 or 4 slot side rack. Price would be $75.95 and didn't make a difference which one as they would be custom. The 14 x 18 racks run $31.45 for nickel and $47.95 SS. I told her I'd think about it as adding cost like that might force me some day to sell the SMO25 and go to the Amerique.

I use the outfit just about every weekend and have 2 sons that would love me to pass on the SMO25 to one of them and upgrade.
