I am into my first smoke about 4 hours. I spent some time reading the cookbook that came with the FEC100 and noticed a couple places where the instructions for Pork Butts was to put on the rub, let it sit for a few hours, and then rinse it off before cooking. Why would you rinse it off. I didn't because I read this after I was already smoking
