There are many different grades (alloys) of "stainless steel." The trade-off is resistance to corrosion (i.e., "rust") vs hardness and durability. 300-series (austenitic) stainless is very corrosion resistant but softer compared to higher-series martensitic (400 - 600) which are harder and usually more heat resistant. I'd suspect CS goes more for strength, at least for hinge and door structures that need to be weldable. Maybe someone who knows CS design can chime in.
