Well here I go again!!

I forgot to rub it down lastnight but I rubbed it down just now with the Butch's Smack Your Lips rub that I have and put her in at 225. I plan to just let it run all night!

It is about a 10 lb.er this time!

I hope setting it and forgetting it all night it not a misstake but here we go!! LOL

Ok she's done!!

It cooked a lot faster then I thought she would!! Good think I got up and checked it! At 3 this morning she was at 195! So I pulled it!

The meat is pink inside this time! I am sure that is from the smoke. But I did not get much of a bark this time. I would not think that not rubbing it down the night before would cause that but maybe it did!

It does have a different flavor then when I cooked it at 300 through, I will say that!

If it cooked in less than 1 hour per pound then:

Sounds like (to this rookie)a possible false temp reading due to probe in a bad spot.

I often use 2 probes when cooking large cuts and it's not uncommon for one probe to peak way to fast. I'm learning to place probes better now but it can still happen.
