Silicone or caulk for 55 smoker

Can anyone tell me what is used to seal the hole between the thermostat probe and the back of the inside of a model 55 smoker? I really don't want to use the wrong silicone or caulk and get it into the food I smoke.

Home Depot carries Hi Temp silicon by the tube, and would probably do the trick. You might want to call Bill or Tony in customer service for their recommendation.

Thanks MaxQ.. I was just concerned about " fumes " after curing and reseasoning.. I've seen the same stuff at the auto parts store in a smaller tube. Perhaps a rubber grommet would work ??
