I was talking to MikeyZ about ribs yesterday and he said that someone posted sbout skinning ribs, think it was Odis. Said that you roll them (meat side in) to loosen the membrane, thene grab and pull it off. Boy does that work great, skinned 3 racks of BB in about two minutes. Well thanks Odis (or whoever's idea that was).

Great tip about rolling the ribs!! I have done ribs many times after pulling the membrane but this is the first time I have ever rolled them first to stretch the membrane. I did 6 racks of baby backs a bit ago that in the smoker now. It literally took me the same amount of time as one stubborn rack did in the past.

We came in fifth place overall with Craig getting a third place call in chicken. I got a ninth in ribs. Not bad but this was with about 6-7 noncertified judges in the process. As far as I am concerned, there should not be any reason for that as there were only 34 teams and there are more than enough certified judges in the central florida area to judge this one. But for some reason they could not be bothered with coming out. Sad.

It was an excellent contest otherwise. Robin, and all of her volunteers, did an excellent job and there was a 50% increase in teams there this year over last. We will definitely be back.
