Mine peaked about 325º,but you could call Cookshack service and they could tell you.

Are you wanting a higher temp than they advertise? My guess would be no. Changing the eprom is a little more involved than just a little programming.
But... like Tom said, ask and they'll help you if at all possible.

From my experience with my SM160 (I had a heating element failure and a relay blow up) One of the safety features is a temp limiter that will shut down the unit at 350 deg.
