Has anyone ever tried to smoke Maryland style blue crabs....if so, how were they? Being from the east coast I am crazy about crab, all kinds. Out here they have "Dungenous" crab. How about you Florida folks...anyone try "Stone Crab"?
Hey Fresno, I was driving to work this morning listening to WTOP and they talked about the Chesapeke Bay and 1/3 of the bay is dead due to pollution. I just moved over to the Eastern Shore and cross the bridge everyday. Personally I wouldn't eat anything out of the Chesapeke Bay. As for smoked crab, I think it might over power the delicate sweet flavor of the meat. Just my opinion.
I agree with Bayside. We live on an Island in the Gulf of Mexico and we have lots of crabs here - blue, softshell blue and stone crabs. There is a lot of smoked fish here. However! No one ever smokes crab.
Crab has a sweet meat and it should not be masked with a bitter smoke. There is even enough salt in the crab that we don't even add additional salt to the boiling water or salt a softshell crab that we saute' or fry.
I live on the Gulf near Biloxi, MS and have had smoked softshell crabs they were excellent! I will ask the guy and see what he used. I know the smoker was a Ole Hickory but that's all.
D's Q, thanks for the post....softshell crabs are one of my favorites. Let me know what you find out. Looks like Katrina might be headed your way. My brother in Miami said it got pretty tore up down there.
