And here I thought I had a freezer full of bait when I could've been smoken em.
If you have any Alder wood use that. Anytime I smoke fish I use Alder, produces a good mild smoke. If you do not have Alder, use Pecan or Oak. I usually set my temp to 215*-225*, put a probe in the thickest part of the fish and take it to whatever temp you want. I start my smoker out cold, not pre-heated.

You're correct.

I haven't eaten there in years, but about once a month I pass nearby en route from the Tampa airport to Sarasota and will stop by to pick up some mullet and their fish spread for carry out. Good stuff.
