We've been enjoying our smoked rice recipe for 20 years or so, but have become big fans of quinoa. Decided to give it a try and it's BETTER than the smoked rice, plus it has twice as much protein for the waist watchers.
The recipe, pictures, and procedures and a couple of mods are in the article from the link below. Be careful not to use too much wood--I used one chunk of apple and that was plenty. Takes about 3 hours.
