I just wanted to say "Thanks" to Tom (#47) for posting the web site for 3 men with nothing to do (www.3men.com) on the Cookshack Forum. I've wanted to smoke salmon for awhile but didn't really know the best method. After reading Tom's endorsement of the 3 men's method, I went to their web site & followed their directions for brining & smoking times. I smoked a 2.5 lb. salmon filet this weekend & brought some in to work today. That fish disappearded instantly! To anyone who hasn't smoked fish in your Cookshack yet - give it a try. I think you'll really enjoy the results!
