Having problems trying to smoke a turkey. Tried again last night and was better than before. Still a little dry. Cooked a 12 pounder stuffed with apples and onions at 250 for 7.5 hours. Used the cheesecloth soaked in butter. I cooked it until 160 in the breast. Still a little dry. Should I try and rotate breast side down half way through. Not as good as everything else I've smoked.

Scot, I used Smokinokie's brine (24 hrs) for a 13.5 lb turkry in my 08. Big Grin . It took exactly 4 1/2 hrs (breast up)to reach 170*. Everybody loved it but my wife. She didn't like because it was too moist! Frowner I think she's the only person on the planet that likes DRY Turkey. I used 2 oz Pecan/Apple & for my first Turkey smoke it tasted great.
