I just read in the Open Forum section in the active brisket thread Donna's statement about the smokette capacity being 22#. I have also read this in the advertising, etc. My question: This past weekend I smoked nearly 19# of trimed butts in my smokette using only the top two racks (turned out great as usual). Physically, I could have fit much more on the bottom rack and still maintained adequate spacing for air flow. Is the 22# limit tied to cooking efficiency, general rule of thumb, structural or something else. I don't expect to need to exceed 22# and the smokette always performs like a champ. It's just a curiosity.

Howdy, RPM.

I'm sure a company oficial will give the official reason ,but I'd guess it has to do with structure of some of the products i.e. it would be a stretch to get more than that of fish,fowl,or ribs without stacking.

I'm with you in agreeing it has the ability to handle more successfully.

I'm just wondering why you didn't have a # 10 can of beans cooking on the bottom rack.

The official reason is that the humidity level will get too high and you will have steamed, not smoked, product. And your Smokette will rust. And you won't like what you get out of the smoker. And you will call us and gripe at us, and you would be right because our customers are always right, even when they are wrong. Smiler
