I'll jump in on this one since I just had to make the same decision.

I was in a quandry with this one for awhile. I do similar quantities to what you listed and thought I could get by with a Smokette. It finally got to the point where my Wife made the decision for me. She told me that if it worked anywhere near as well as I was expecting, it wouldn't be long before I would be wanting to upgrade. So on her advice, I bit the bullet and decided on 50.

After receiving and using my 50, I made the correct choice. I can see myself filling this up at times. The smokette definately would have been cramped for me.

Thing about it in terms of, given great success, how much will you Smoke at one time?

The Smokette has 3 14x14 shelves and the 50 has 5 14x14 shelves.

You mentioned a lot of things you like to smoke (but not all at once?) What would you smoke for a typical part, that should help decide.

I have a smokette and it is fine for me except for ribs. Wish I had the 50 when cooking ribs for a party! I seem to have plenty of room for everything else. I have fed upto about 25 people with everything except ribs. Butts seem to feed the most. I easily fit 2 six lb. butts, could probably get 4, but two go a long way. Big Grin

As far as rolling them. You have to St. Louis cut them so they'll stand up correctly. Use something (a skewer or cooks twine) to hold them in shape. Depending on how you roll 'em, you can double the capacity. But you have to remember to turn them over 1/2 way through the smoke. I found rib racks work just as well. You can't get them for the Smokette, but some of the weber types work fine.
