So, here's my latest theory.....

....for all of us Injectors.

Have you ever notice, that when you inject, that it doesn't seem to stay as intense a flavor as when you made the injection and tasted it.

Here's why, and it's my theory. Just like everything else in life, the "fruit" juices we use are more and more water and less and less flavor. I'd say many of them are 90% or more water.

So, here's what I've done, and it's my theory, so give me credit, so there Big Grin

Don't use any Fruit Juice that isn't 100% or close. AND, before you inject, boil the solution to reduce and concentrate the flavor and let some of the water evaporate. The water is going to evaporate inside the butt anyway during the cook, that's why there isn't much flavor many times, after you inject...it seems to evaporate --- hmmmmmm.

For your next butt, try and injection with this "intense" and add your flavors, and inject your butts with as much as you think.

And you can do this with any solution, even the Butt mops I've posted. Just remember, if the key ingredient you are using has a lot of water in it, evaporate the water first.

p.s. The story is based on a real life epiphany I had with a Memphis in May team that was having difficulty with their injection methods -- not any more Wink

I'm always buying the frozen apple juice concentrates for my 3 year old daughter, and I can tell you that they are pretty strong in flavor when they are still undiluted. I can't wait to put your theory to work..after all it makes perfect sense.
It also makes me wonder what would happen if you heated your beer and let the water evaporate out of it.....?
I'm usually adding beer to any of the injections I use on poultry.....cant wait to try it out....thanks Smokin
I would have to agree with you on trying to concentrate your injectable before injecting.

I do have a question though, when I inject a chuck of anything or even a chicken and then put it in the smokes why does it seem that most of the liquid that I injected ends up in the drip pan, like it was all cooked out or the meat?

As for your idea Kevin, on the beer, if you have a flavorful brew and you reduce it 50% on the stove, I think you will be pleasantly suprised. I make peanut brittle with boiled down beer and the flavor just intensifies with age.
