Smoking previously frozen raw sausage

I'm making polish sausage today but can't smoke it until next week. Can I freeze the sausage, thaw,and then smoke? If I can, is it safe to refreeze if after? Also, what are the guidelines to know when Polish sausage is properly smoked? And are they cold smoked or hot smoked (if so what temp). I'm using Cure#1 and seasonings. Thanks.
