Have seen several references to rude petes recipes but can not seem to find it. Can anyone give me its location.My problem with Tuna is it is flat out awsome when it comes out of the smoker, but the next day it has the texture of pate'. Thanks

It does a good job,as I tested it for a contest ,years ago.

Stay on the less is better side.

As I remember,he also did a dry brine turkey that was excellent.
