I am looking for a recipe to make snack strips or snack steak similar to what Jack Link has for sale. I saw something on the food channel about a place where they made something similar out of sliced brisket, but don't have any idea how Jack Link makes them. They are a moister version of thick jerky and have a lot of flavor. The ones on the food channel were marinaded and then smoked. I figure homemade would be better and cheaper.

I've searched on Cookshack's forum and the Food Network. I even tried a few web seaches. All of the recipes seem to be for the standard very flat jerky. I think I'll try just using a brine for jerky, that looks good, with thicker cut pieces of meat. I should be able to smoke it at a drying temperature for jerky to a dryness that I like after that. Hopefully it will turn out edible!
