Hi all...

Sorry to be out so much from this wonderful forum but there has been much goings on and have been far too busy...

Anyway, I found a middle eastern spice from Lebanon called a Mahlab. Its made from the pits of a sour cherry tree and is supposed to impart a sweet/sour and nutty flavor to whatever you are cooking with.

In the vein of our famous Stogie (has been quite succesful in using cherry products on ribs), I am going to try this on some baby back ribs. I have also found cherry cider which I will baste the ribs with...

If anyone has heard or used this spice please let me know...

Bought some mahlab a few years back from Penzey's. Didn't really find a use for it - would be interested to see any recipes you develop.

Another similar spice is sumac - it's sour/bitter but does have the advantage of giving a deep red color to things. Sort of like a very dark paprika.

My buddy Wally who owns a Mideastern restuanant came through.Mahlab is a BITTER/SWEET spice.He stated several times it can over power the foods and very bitter.Its also used in the east as a cure for kids with colic. He sugggested to use it mixed with other spices,and in small amounts.He was kind enough to give me some to play with. I'll let you know how my mixing comes out,good luck with yours.

I know the Mahleb is the fragrance that you smell if you are ever in a mideastern bakery and its in the various pastries that is cooked.

I will let you know how it turns out...I dont plan on using it very liberally cause it can be bitter.
