What type smoker are you using? If it is a big offset logburner, by all means, spritz with some apple juice now and then or 50/50 mix of beer and applejuice. If it is a Cookshack, rely on your marinate and your rub and keep the door shut until it is done. It takes long enough to cook a brisket. If you open the door for just 30 seconds, add another hour to that.
