Temp Swing? I don't think so

Can anyone tell me why my 008 is operating at 212 degrees when I have it set on 150? This is not desirable. I am trying to smoke some salmon - not bake it.

I used it the other day at 225 and it stuck right around there.
Temp probes are fine.
The thermostat is not blocked.
I have an extension cord but it is not over 20 ft. I can't remember the gauge but it is twice the size of the CS cord.
Help. I am getting irritated.

The minimal amount of product makes it more difficult for any oven to maintain temp.

Short cooks,like fish,are tougher -in ANY cooker.

The Smokette,packed full,has minimal temp swings.

Give it a chance and learn the cooker.

It won't be long,until you're thrilled.

The CS OO8 has large temp swings, like about 40*, but it averages out at about what I have it set at. I called CS support and they said this is normal for they type t'stats they use.
