As some of you know, I am smoking trout on a regular basis....will probably sell some or trade w/clients for their fresh catch at my pond....so...

If I substitute 1 tsp of tender quick per pound of fish can I vacuum seal the finished product and not refridgerate it? How long will it last if say I mailed it? How long would it last without refridgeration is what I'm asking. If I need to refridgerate it, how long would it last? Can I freeze it?
