Thank You all for helping me decide. I ordered the Amerique this morning. I can't believe how many helpful people there are on this forum. I spent hours trying to find negatives about the Cookshack product to make sure I was making the right decision. The only negative comments I could find on different forums were from what seem to be die hard stick burners and even then the comments were that Cookshack makes quality but just not right for them. I am 100% confident I made the right decision and can't wait to get it season it and make some Q.

I just got one last week. A learning curve as I have been using a WSM previously. Great product and built like a tank. The greatest difference between this and a traditional smoker is the humidity. I think once you learn to smoke with this humidity factor, it should be a breeze. I really like the holding feature.

Great purchase. You made a wise decision. I have been using stick burners of all kinds for many years.

I really think that the biggest adjustment is how darned easy preparing great food becomes with a CS...any model. I think back on the hours and hours spent worrying over fire temps, air flow, smoke saturation...poking, proding... all gone. Now, the fans just think "I" am exceptional! hahahaha
