I'm not sure that you really want to do this. If I'm not mistaken, the dripping's will be primarily poultry fat. I little may be good, alot maybe not. And further, it could lead to food contamination issues. If you really want the drippings, I would think about placing a pan in the Cookshack to catch the drippings as long as the pan didn't get too hot and burn the drippings. I haven't done this, so I don't know if it's recommended or not. I'm sure someone will speak up. Good luck.
My preference is that not every item in a meal be smoked,so that the smoked items stand out.

Dressings can be made flavorful enough to stand on their own.

i.e.,we serve smoked deviled eggs with a non smoked meal,and they always stand above all else.

Like LA says,poultry drippings are usually a mess that we try to avoid.
