I just got finished smoking 4 1/2 lbs of meatballs in my 55. They look and taste awesome. I was a little concerned about them falling through the racks but that never happen. They were rolled into 1 1/2 inch balls and put directly on the racks. I smoked them at 225 for one and a half hours then finished at 250 for the last half hour. I used one small chuck of apple. They don't taste smoked but have a nice flavor. I'll be making my tomato sauce the normal way on the stove top.
