My husband and I are confused (nothing new). We have heard you should allow 90 min/lb for brisket or pork butt (smoke for half time, 200-225 rest of time). HOWEVER, we need to make 2 briskets and one pork butt this weekend. Do we take the total combined weight of ALL the cuts or do we only consider the individual weights? What if we cut a 14 lb. brisket in half before cooking - do we now use the 7 lb weight instead of the 14 lb? Just don't want to mess this up. We've done brisket and pork at the same time - 7 lb. each - and used 7 lb, not 14 lb for calculating our time and it turned out great - but does this also hold true if you cut a brisket in half? It just seems odd that you would do 21 hours for a 14 lb but only 10.5 hours if you cut it in half - am I still confused - yes.....help!
