I smoked my first pork butt yesterday. It was finished about 1:30 this morning. I wrapped it in heavyduty foil and newspaper and put it in a cooler and went to bed. How long can I keep it in the cooler? We're not planning on eating it until about 3 0r 4 this afternoon. Do I need to go ahead and pull the pork or wait until it's time to eat? If I have to put it up in the fridge do I warm it up in the oven and then pull it? I've never had pulled pork before and this butt came out beautiful. When I took it from the smoker I thought it was going to come apart in my hands, extremely tender. This is also my first smoke in my smokette, I feel like a proud papa. Thanks.

If you pulled it at 1:30 and you're eating 13:30 later, you can't hold it that long. The temp will drop below 140 and you'll have a good chance of people getting sick.

I would put it in the fridge. Double wrap it so juices don't leak out. Don't pull it yet.

At 1pm, turn the oven on to 200. Put the butt in. One hour, turn the butt over so the juices that were in the bottom are now in the top. They'll moisten the meat.

Take it out at 3, even if you're eating at 4. Store it in a cooler.

Pull it so everyone can watch and OOOOOHHHH and AAAAAHHHHH your first time.
