I suspect it is a matter of preference. My wife likes Texas Rib Ranger sauce on her ribs, while I will not ever use sauce. I want to taste the meat and the smoke and have had too many bad experiences in bbq joints. The same goes for grilled steaks. She uses all kinds of concoctions on hers, while I use a little salt and pepper. I simply like the taste of the meat. I don't see how you can beat it with a stick.
