Mike ,here is one of my "works in process" that you might try out and adjust in your quest for" the coffee sauce".
  • ...TOM'S CHIPOTLE COFFEE BRISKET SAUCE...
  • 2 Tbsp oil
  • 1 cup diced onion
  • 3 garlic cloves,minced
  • 1 cup ketchup
  • 1 10 oz. can Rotel tomatoes & peppers
  • 1/2 cup STRONG black coffee
  • 3 Tbsp Worcestershire sauce
  • 3 Tbsp molasses
  • 3 Tbsp dark brown sugar
  • 2 or 3 canned chipotle peppers in adobo sauce,chopped
  • 1 Tbsp brown mustard
  • 1 tsp kosher salt ,or to taste
  • 2 Tbsp cider vinegar
  • 2 Tbsp fresh lemon juice

...Saute onion and garlic in oil till soft....Add all other ingredients, bring to a low boil,reduce and simmer 30 to 45 mins.....Remove from heat and puree in blender....Thin with chicken stock , if needed....Let me know if any of your adjustments help it. Big Grin
